What camera setting to use??

My wife just got a new digital camera and taking pictures is definetly a weakness of mine. There are alot of preset scene settings but what should I be looking for while picking one? I see one called "underwater macro" is that the one, because when I use it the flash goes off and everything looks very un-natural.
Here's a link to the camera http://www.olympusamerica.com/cpg_se...p?product=1190
Any help would be great, even if you don't have the same camera maybe I could find a similar setting on this one.
Thanks

Good choice...Olympus is the foremost authority on cameras, in my opinion. I'm shooting with an Olympus C-8080.
Anyway...
Selector switch to "P". No particular "scene mode" and the "underwater macro" is for underwater photography.

OH ok, so you use the No particular scene mode? I'm pretty sure I saw that in there. I swear.... sometimes too many options is a curse sometimes. My first digital camera was so simple compared to this.

I have 10 - 15 "scene modes" on my camera that never get used. I'll use the "night time" mode, only if I have a tripod.
99% of the time, my camera stays on selector switch "P".
