when an anenome dies, does it release it's 'venom' into the water and kill everything around it?
Obviously it would cause a huge ammonia spike, so what does one need to do about such a problem?

they have the habit of completley coming apart into a mess when they die. No true body to remove.
The toxins are one thing but the flesh begins rotting in minutes. Best thing is to run loads of carbon and floss if possible.
Smell testing works on them too. If you have one thats sick, bring it to the water surface and smell it. If its bad then its time to QT it to protect the rest of the tank.

Dead anemones are the absolute worst. Do a water change as soon as you see it decaying, and run a load of carbon. You will almost surely get an ammonia spike if you have an anemone die in your system.

How much water would u need 2 change? 20 percent or more?

After cleaning out (with siphon) as much as possible, I would do a 50% change if you can and then run carbon for a day or two.I would then test the water and do another huge change.
If you have LR in your system the Biological filter wont be hurt by large changes.
Good luck

on 100g if amonia is at .25 then it takes a 50g change to bring it to a .125
Answer is obviously as much water as you can, given the new water is ready. Depending on the tank, large changes out of nowhere are sometimes hard to accomodate.
