How long has your tank been cycling?

If your ammonia has spiked and now reads zero your nitrites will soon follow. Once you start getting zero reading for ites you can get an accurate reading for ates and decide how big a water change is necessary. Twenty seven days is not exceptionally long for a cycle.

You need to mix up your salt water (new) in a dedicated container say like a rubbermaid etc. and put in a power head to let it stabilize for 24 hrs. Take water out of display with a siphon and slowly replace with new water insuring that they are exactly the same s.g. and temp.

I am assuming your pH and other readings are normal? Depending on how hard your tank spiked, this is not too much of a concern, but I would be more concerned if it doesn't start coming down in a few days. Sometimes a cycle can seem to stall.
