Whenever creepy crawlies are transitioned, or moved some always die off. You will have a spike no matter what. All that varies is how big it is.

May I please ask what you consider a spike
 
i think the spike hes talking about is like the ammonia it will jump from .0 to mayb 0.1-0.5 minor spikes but then settle down. or some severe spikes of 1.0+ im assume.

That depends. If the rock is fully cured then you will see no spike at all. An ammonia spike comes from dead or decaying matter on the rock. If there is no dead or decaying matter then there will be no ammonia spike.
A spike to 1.0 is pretty severe. That means that either there was still decaying matter on the rock, or there were dead spots in the curing tank, meaning not enough flow. In that situation, there would have been life on the rock, but the lack of flow caused it to die.
You do have to be careful though. Many stores claim that rock is cured when it is not. It is always safest to place the rock into a QT or tub, with a power head and heater, for several weeks just to be sure. Another bonus to this is parasite control. Parasites can come in on live rock. They will need a host fish. If the rock is left in a separate container for three weeks then you will be sure that it is fully cured and will not bring parasites into your display.
I have added to my rock several times. I just put the rock into the Qt, test and wait. Three weeks will ensure no parasites. More is needed if there is indeed die off.
