35 gallon Hex tank - all small(less than inch)
Ocellaris Clownfish
Royal Gramma
2 Red Eyed Cardinal Fish
Yellow Goby (tiny)
Chocolate chip starfish
2 Turbo snails
2 little snails
5 little hermit crabs
Am I done or may I add something small?

Looks like your good for now but who am I to say? I have an over stock tank that makes people here frown. :/

It is like anything else you always see alot of the same fish in the same tank at LFS - they are not there long. A lot of people put cleaner shrimp in pairs I had one in my 65. I plan on putting two in soon. I think you should just go with one in a 40 gallon tank.

Fish: you're stocked.
Inverts: you could add more. 2 cleaner shrimp would be okay, but you'd probably be better suited with one and more snails and hermits. Take a look at a fire shrimp, great cleaner that adds some great color.

These fire shrimp are gorgeous.
But let me ask you - what kind of care do they require?
I've seen them in the store but they scare me that they will require more maintenance or that my fish would eat them (I love shrimp lol)

They're fairly easy. If you can keep hermits and snails, you should be fine. They don't tolerate copper, very high nitrates or swings in salinity.
None of the fish you have should bother a fire shrimp
