I bought some LR from a friend and it came with a bunch of hermit crabs and emerald crabs and snails and things like that and I was wondering how I can aquascape without killing them. Can I just hold the rock above some saltwater and the hermits will jump off???

how much rock? how old is your tank ? are you cycling?
If you bought it from a friend and it had a bunch of hitchikers why don't you just put it in your tank and let the crabs stroll out ,it sounds like it was mostly cured and that it came from a stablished tank, so it will have minimum die-off .But still watch ammonia levels for a few days and do a waterchange if needed. then aquascape and watch ammonia levels for a few days & finally do a waterchange if needed. If ammonia/nitrites are not there then you're good to go. Also keep Nitrates at a low level, close to none..

100lbs of rock in a 60g tank... part of it in the sump.
I understand cycing, but I am going to be taking the rock out of the water to take a look at everythg before I set it up so I don't want to have to rip the hermits off/out of the rock and back into the water.
So is there nothing I can do about hermits being out of water for a while?

just use a trash can (clean of course), put a bunch of saltwater in that trash can and put all the rock in there as you are arranging your rocks. Then check the bottom of the trash can for loose hermits and snails.
