Depends on what type you're using. Some have a float switch that once it drops to a certain level it turns on a pump, and once it reaches the normal level turns off the pump.
The kind that I'm using has a little tube that detects a change in pressure from lowering water level and turns on the pump.

Do all of them need an RO unit hooked up to them? Or can you just have like a resevoir of water (10g or so) and then refill that maybe once a week instead of the tank everyday?

I answered a question like that in another thread.
I would have it hooked up to a limited supply. If for some reason your switch or float fails (my first one did) and your ATO is hooked up to an endless supply of water (my first system was) it will continue to pump freshwater into the tank (my first system did). Better have it pump in 5-10gal and run out than pump in a whole lot more.

Mine is the Tsunami AT1. I can't remember who makes it. It's got a little tube that is in my sump with some airline tubing that goes to a little box where my minijet pump is plugged in. I have a 5gal bucket of water sitting next to the tank that lasts about a week (little less in the summer).

If you can gravity feed it you can make one really cheap. I use a Kent-float and a rubbermaid . The container is in the room behind my DT but higher than my sump,one small hole in the wall is required but its down low and behind your tank. The cost of the hole in the wall can be quite high if your wife doesnt like it and kicks you out :}

What kind of pump or powerhead can you hook up to one? Do you have any pics of your setup?

I have the minijet 404 on mine. It doesn't need to be big or fancy, just have enough juice to pump it from your container to sump. I'll post some pics once my camera charges up.
