buffering question....

I was just wondering... what is the difference between a fancy bottle of buffering agent and a box of good old Arm&Hammer Baking soda?... they are both basically made up of sodium bicarbonate.... which is used universally as a buffering agent for any chemical reaction... so the big question is... can I simple use baking soda?...

Arm&Hammer Baking soda will work fine. Just make sure you test the alkalinity before buffing... and monitor the calcium.
