What does everyone finish their canopys with? I'm worried about the salt creep and the moisture on the inside. Thinking of making one

Minwax has a product line called Polyshades, comes in all sorts of colors, and different sheens. Biggest benefit is is has the poly already in it so its a one step process for color and sealing.

Using straight up poly to seal the inside of the hood will slow down and prevent the moisture from penetrating.....You'll need to do a couple coats IMO.....

For the inside, I use gloss white paint. Several good coats and it is nice and sealed. No problems with moisture.
I have used the Polyshades on several projects (several coats always) with no problems. The urethane in them is enough to seal the wood as long as you use 3+ coats.
For areas that don't need painting or staining (inside of stands) I simply use a wood sealant like Thompsons waterseal.

The best overall sealer for marine tank hoods (though others do work almost as well) Is marine polyurethane it is a two part sealer mixed like epoxy designed specificly for use on woodtrim on sailboats etc. Its the best and expensive. Call a paint specialist store and they will know the exact name I cant remember off the top of my head.
