what are the benefits to using a carbon media device? does it take anything out like cal. is it better for the reef?

I em no expert but it removes impurities from the water like NITRATES. I don't beleive it filters out enough of your trace elemnts to matter.

Its not a nitrate remover however it does aid in eliminating impurities that may be present in your tank, also any toxins that might be given off by anemones or corals.
Its recomended to run carbon in 2 week intervals I have read that over using can actually take away from some essential nurtrients in your tank. I run mine for 2 weeks and then nothing for 2 weeks, and start all over again.

Do you think that the filter removes nutrients from the water that are not replaced by a good salt mix? I think I have too many fish in my tank to want to risk not running my filter for two weeks.

No I do not.... I wouldnt not run your filter for 2 weeks I would just remove the carbon bag for 2 weeks. You always want your filter to run as your biological media is essential for constant filtering.
