I just set up my 75g reef. I am going to let the tank cycle for a few weeks. the first thing that I want up is a clean up crew. What and how many sould I buy

I would hold off on buying too large of a clean up crew at the moment. Unless their is a lot of detritus to "clean up," which there probably won't be considering there aren't any other waste producing inhabitants, some may starve to death. I would buy a minimal number to accomodate your needs at the moment and add accordingly over time. Some cleaners may very well eat food you introduce or pick at the the live rock, but there simply may not be enough present to sustain them all.
That being said, I would start out with some scarlet leg hermits, turbo snails, maybe a few brittle stars, and a sand-sifter of some sort. I generally try to steer clear of blue leg hermits, however...those little buggers can be downright mean and I have seen them seek out and kill scarlet hermits and snails. But this is just my experience...others might offer better opinions. Good luck!
