I have one coral shrimp and was wondering if it could possibly reproduce on its own? The thing is that we had it for a year and all of a sudden there was baby shrimp everywhere.

i dont think they are coral banded shrimp i think they are a smaller species ive seen them at my fish store they said they where mysis...try and see if you can get a pic of them

Yeah, I doubt they're CBS, but they might not even be shrimp, they might be copepods. You usually won't actually see them wandering around the tank until it's about 6-12 months old, so if this is the first time you've seen them and have had the tank running for a year (like you note having had the CBS), then it's likely copepods. They do look a little like shrimp, since they're crustacean inverts too.
