crabs eating snails

They most likely not eating your Snails.
As the Hermit Crabs grow larger, they will move into larger shells. If no shells are provided, or if no shells fit the exact size of the crab, the Hermit will most likely kill the snails for their shells, or sometimes possibly other shell-dwelling inveribrates.
I recommend you add an ample supply of shells in various sizes for the Hermit crabs.

Yep, SPS is totally right. Before I added shells I could watch one of my crabs walk up to a snail, flip it on it's back (presumably to wait for it to die) then walk away. I went through about 3 rotations of him flipping it over and me flipping it back before he finally left it alone. (I then added shells and the hermits all upgraded).
