Who are the attendees? As a husband, and father, I am sick of spaghetti (and any variation of it). I have some ideas, but it depends on who's coming.

Tacos, Mexican Salad( which is just shredded lettuce topped with chopped tomatoes, shredded cheese, sour cream and guacamole, if you like it) mexi-corn, (which is just canned corn with little pieces of jalapeno peppers in it), I think it's Green Giant brand and chips & salsa. The whole meal will cost like $20.00 - $25.00 if it's just your family.

3 cups minute rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup milk
1 pack dry onion soup mix
1 chicken cut up or I use 5 or 6 chicken thighs (thanks Costco)
Mix Rice, soups, dry soup and milk together. Place concoction in 9x13 baking pan, place chicken on top. Cover with foil and bake at 325 for 2 ½ hours.

So, what did you end up making?
And the next time that the menu is your responsibility, make it a Manwich night. It's so easy that even I can make it without screwing it up! Just serve up a side of baked Lay's potato chips, and you have a complete meal.
Oh, and if you really want to elevate it a notch, pair it with wine--a nice red Zinfandel (not white Zin--blech!). The fruitiness of the Zin goes nicely with slopply Joes; anything else tends to taste too acidic/astringent with sloppy J's.
Hope that helps. I'm off to refill my glass...
