if you do know you have a mantis, adn can find his hole, remove the rock, and shoot club soda in his hole, IMO, that is the best most reliable way to catch one, jsut use caution.
If you suspect one, go hunting at night, using a red lensed light, and you may spot him out hunting himself. Thsi could tell you if you have one or not.
something is definitely fishy, but I still think we should look elsewhere. since nothing else is disappearing. Again, you should have noticed snail and crab shellls by now, broken open and such, b/c mantis generally do not suck them out of their shells, but bust open the shells to get in.
