I also run a canister filter. They require more frequent cleaning. If debris is allowed to build up they become nitrate factories.
Rather than replacing the filter pad, rinse it thoruoughly in the saltwater you removed during the water change. This way you don't throw out your beneficial bacteria that lives in the filter.

I think you need to increase flow as well. One PH and the Fluval are not enough for an 80. It will allow food to accumulate in dead spots usually around the base of your rock or in barnacles.
I think feeding once per day (and even every other day) will help as well. What kind of shrimp do you feed? If brine, you should switch.
How often do you perform your water changes?
How much LR do you have?
I just feed brine shrimp, but i've had him for like 4 years and he's always eaten like that, lately i've been doing water changes every two weeks trying to get nitrates to go down... but i'm planning on doing one this week also, i also just recently started adding live rock so i have a measly 9 pounds :0/ going to add some more this weekend though.. and just woundering why not feed him brine shrimp??????

As an occasional snack, brine is ok, but lacks the nutrition your fish needs. Mysis is a much better choice.

The live rock will add surface area for bacteria and will essentially be your filter. The more LR you have, the easier it will be to control nitrates. I think you should increase the frequency of your water changes. If you increased to every 2 weeks, then your regular schedule was less than that, right? This is especially important with a canister filter that runs "dirty" anyway.

Nice avatar, BTW.

I use api test kits no problem with the accuracy. Only problem is its hard to tell the color diff on some of the tests.
