Emperor Angelfish Coloration Change

I have been unable to find information on the Emperor Angelfish in regards to when to expect to see the transformation from juv to adult coloration. I have owned a juv for approx 10 months that has not began to change yet. (Not sure how old it was when purchased?) 125 gallon tank w/ lots of rock and stocked with fish about 1/2 of capabilty. Water quality is maintanied and I am feeding a variety of quality foods and romain lettuce, it eats all well. The angel is approx 3-3.5" long at this time and has grown about .75-1" in the 10 months I have had it. Any thoughts on when changes may begin? Any particular additions to diet suggested? I would say you should be seeing at happen at anytime now. When I raised one it started to change at about 3-3.5". There are prepared foods specifically for angels with lots of sponge in it. Nori would be good for it also. Mine ate anything I put in the tank. I would strongly suggest adding garlic and vitamins, such as Selcon to the food.

From some research..... they change around 5 inches and takes about 3 to 4 years, they are egg scatterers and the fry are solitary and cryptic.

What is the best way to supply Nori. I am finding few places that seem to offer this. Is there an alernative that is equally beneficial?

Some grocery stores or oriental specialty stores will sell it as sushi wraps. Just make sure its unflavored, no additives....
