Keep in mind that smaller does not necessarily equal cheaper in this hobby. Smaller systems are much trickier to keep stable, and you can end up spending just as much on smaller sized equipment as you do for a big tank.
I would personally just spend a few weeks just with the LR and LS even after cycling, letting things grow and adjust, and then slowly add snails. Keep in mind that when you move and add all this stuff, what happens is that some of the LR stuff dies, then as dying releases toxins that kills more stuff, and so on, until the system finally stabilizes. It can take a while even after cycling to really even out.
