You're probably using the built in controller on the heater.
Most heaters are off to some degree, with the quality of the heater to some extent determining just how off. What would be nice is if more heaters allowed their temperature dial to be calibrated, but the only brand I know that does that is Jager.
Frankly I don't even pay attention to the temperatures shown on the dial (and I use Jagers). I just keep inching my heater up every day until I reach the temperature I want (measured with a thermometer, not the heater's dial) then leave it alone.
So moral of the story is if you want your tank at 80, set your heater to 76.
