The tank has only been set-up for 5 days and the Damsels have been in for 5 days correct. When do I know when the cycle is done to remove them?

the tank will get extremely filthy .. you'll think something is wrong .. everything will get brown and green .. then it'll go away .. cycle complete .. it takes a couple of weeks

Yea you're ammonia will go through the roof, then decline then nitrites will go up sky high, then decrese then nitrates will rise then decrease. When it is stable for a few days do a 20% water change and you'll bo complete.
The LR will only help it, It is much better to add it all at once because you don't want to cause a mini-cycle after the initial cycle is done.
If I were you I would take out the damsels, add a peeled live shrimp and let nature take its course.
