I believe you when you say he is acting fine, but I have never seen one that color before. Can you post another pic to see? Very odd coloring.

I honestly have no idea what would make your hippo change colors like that. Since this section doesn't get the most viewers maybe you should post these in the reef section to see if anyone would know. He looks happy enough, and good body weight, so I am puzzled. I know that fish will change colors if stressed, maybe this is the reason. Good luck.
