LOL, NO im making some for lunch and want to know the general census! There is ONLY ONE CFR! Often imitated but never duplicated!

Skin on, we always called steak fries.
Double frying fresh potatoes is best.
Fry them then remove and let them cool. They will not fully cook the first dip. After letting them cool, fry them again to brown them.
Fry time will vary depending on the size of the fries. he he...that rhymed

Sorry, I thought you were deep frying thick cut fresh french fries.

Depends on the type of potato! The big idaho ones usually get skinned but if I'm using red potatoes I'll leave the skin on since its a lot thinner.
