I have seen "PH up" and "PH down" chemicals, is this what is used to control PH during hypo treatment?
How sudden or large is the drop or increase in PH during hypo treatment?

Yes, something like that. Get a marine buffer product...or you could use fresh baking soda. Be sure to test for pH frequently, but make adjustments in pH gradually.
Since you are not that familiar with it, I would suggest getting one of the more stable products offered by the hobby. pH, should be kept pretty constant, but, when out of wack, you have to do small, gradual adjustments.
