Quarantine all new fish and watch for ich and other signs of disease. Only treat them if you see problems. That said, a lot of people will do a freshwater dip before putting new fish in quarantine or into the tank.

you don't have to qt snails and shrimps, and definitely don't give them a freshwater dip. the only thing a freshwater dip is used for is to kill parasites which are inverts, which snails and shrimps are too. inverts also can't pass an illness to fish. as long as you use your qt tank for new fish you shouldn't have any major problems with your main tank. i havn't since i started using a qt tank except i usually keep them in there for 2 weeks if there are no signs of illness or parasites. if they do show i treat until gone and then once gone 2 weeks from that point.
