omg it SO depends on my mood and what I'll be eating it with! cheddar is awesome on its own and in sandwhiches; but only if it's good and sharp. Same with swiss and pepperjack. mozzarella is only good FRESH in caprese salad or sprinkled w/salt and vinegar or olive oil (GOOD olive oil, none of that supermarket junk), and parmesan goes on salad and pasta.
bleu cheese is good in dressings, goat cheese is ok in moderation but it's a little strong for me so I like to put tiny bits in sauces for an added kick, and feta cheese is FABULOUS in omlettes and salads or even stuffed in olives; but it has to be FRENCH feta, not Greek feta; Greek has FAR too much salt for me, blech.
I'm not a fan of the softer cheese but the Hubbs just LOVES a good brie every now and then on some toasted artisan bread.
cheese is definitely one of the finer things in life, man.

I like most every cheese. I am a cheese addict. My favorite cheese is a good cheddar, sharper the better.
Some friends and I came up with a theory that you are either a chocolate or cheese person. Liking one much more than the other, but ofcourse liking both in general.

Dang, picking one if tough, but if I had to live with only one, definitely would be an extra sharp cheddar. Just too many possibilities.

GOAT CHEESE!!!!!!!!!!!!
Mozzarella is a close second when goats cheese cannot be found.
there is a cheese shop about 45 minutes away that sells this goat cheese from italy that has been marinated in wine for 40 days. its GLORIOUS. totally worth the drive all the way out there

It depends on what sort of item said cheese is being placed upon.....Really like Blue Cheese and the Blue Cheese family of cheeses.
