If the foan is thick and holds itself together while falling into the collection cup you are most likely NOT over skimming. If you can easily see the foam running down then it is probably over skimming. Mine looks like the same foam is suspended for a long time because it move so slow.
Other than cup capacity and the expense and hassle of replacing lost salt water, my thoughts are over skimming is probably better for you tank, just not practical.
