Horseshoe crabs are readily available in the hobby but make poor aquarium inhabitants. They grow large and feed off of the micro-fauna in your sand. They are not suitable, long term, for even large aquariums. Jawfish are nice burrowing fish. What other sand sifters are you asking about? Fish or invert?

To keep your sand healthy and alive with more than bacteria, go with sand sifting inverts such as nassarus snails, bristle worms, hermits, etc. They are detrivores that will not strip your sand bed.
