You poach/boil you artichoke whole, and then you slowly pull all the leaves off one by one. on the base of the leaf where it was attached to the head there is a little bit of edible stuff like the heart on it. Then you dip it in a bit of the mayo(sometimes a seasoned mayo if you like) and scrape the edible stuff off with your teeth. It takes a while to get to the middle but when you do there is the heart waiting for you, after you rip off the flower. dont eat the flower. The heart is basically were the stem meets the base of the fruit.
