What is the difference in cured rock and uncured rock? One local only sells cured, another only uncured and then one that sells both!

Always go for the "cured", otherwise you will have to cure the rock yourself. Basically this is kind of a "cycling" process for live rock. the cured being the cycled rock.
If you get uncurred, then you will get a lot of dying off of the rock and will need to do this outside of your tank setup, otherwise, the dying off process will pollute your main tank.

Stick with the cured rock it'll save you alot of trouble. Its a must if you have your tank already set up. unless you want to spend weeks curing it your self.

Depending on how fast you want your tank set up and much money you want to spend all at once determines b/t cure and uncured. I have been setting up a 110 long for quite since October. It went from fish only to having over 175 lbs. of live rock in it. Cured rock is usually more expensive, but you receive imediate saticfaction. Uncured you can by more of and if you can wait two weeks to put it in you tank you will come out ahead.
