need help with shrooms

today i tryed to cut a few shrooms off at the stem, well everytime i would try to lift the side of one of them it would shoot water at me from its mouth, and it was stuck on the rock very well, couldnt get it up far enough to see the stem. any idea on doing this? i ended up just taking a hammer and screwdriver to the rock and make it into 4 different chunks, hoping that would help, but didnt, any tips would be nice, thanks.
edit: also any easy way to get star polyps off a rock? i could only get like 3 or 4 polyps at a time off, not as much as i wanted to get, thanks again.

i didnt find anything that would help, i know what to do when i get it off, just cant get it off without ripping it into tons of tiny parts, i want it whole, anyone got any tips for this? its almost as if it got down into a small hole and i can get it out.
