newbie: cycle question

I am a newbie to hobby and have a question on 1st cycle question.
Bought a 40 Gal. flat back HEX., with about 40# of LR and crushed coral substrate, skimmer and canister filter. Brought home 15 gallon of water that I used to keep rock in.
Have set system back up with 60# of Aragonite sand bed (about 3" deep). Used the 15 gallon of original water, and RO/salt water for the rest. Bought another 3# piece of partialy cured LR and added to tank. Also added 2 raw shrimp to tank for good measure.
Now my question. Have yet to see an Amonia spike after about a week. Running my canister filter with nothing in it for circulation, as well as a powerhead. I am also running my skimmer for circulation and it has stated making foam. Should I turn my skimmer off until my cycle is done or is it ok? I looked on this board and found some saying it was ok to run the skimmer during cycle.
Am I on the right track with my setup? Just asking the experts.

IMO you can turn it off, or leave it on. Protien Skimmers don't actually remove ammonia, nitrite, or nitrate, so it won't affect your cycle. Of course this is my theory, and I may be missing or forgeting something about skimmers.
