second, yes refer to that as a sabea, heteractis malu etc... it should not be white, it should turn more of a brownish yellow color after it gets back to full health.
Third, despite what inkman says it is very rare to be stung by anything other than a carpet, I have handled hundreds of anemones, and have not been stung once....but I guess it is possible to be alergic to them as he mentioned. heck my wifes friend died after eating a shrimp at the age of 29 developed a rare allergy....so I guess all kinds of strange things happen
fourth, really no need to be touching your anemone, the worst thing that can happen is it gets wrapped around you, you tear it's foot, or a tentacle, or it develops a bacterial infection. Heck I keep my hands out of my tanks unless absolutely required(plus if you have ever seen fish TB develope in an aquarists hand it is ugly, and painfull)
also my opinion feed small amounts of food daily, like small pieces of shrimp, silversides etc... not big chunks small amounts. If that is a challenge than try to feed it every few days, with shrimp, or silversides, or pieces of squid.
