Red Velvet Cupcakes

anybody like red-velvet cake? I have never had it before, but I got a recipe from a friend who RAVED about it - I am unimpressed. It's nice and moist and not too sweet, which I appreciate, but I feel almost as though it cannot decide whether it wants to be chocolate or not. I know a number of people who are absolutely OBSESSED w/ red velvet cake - am I missing the point, or is this recipe simply not up to snuff?

what recipe did you use?
If you want to know if its the recipe or the actual red velvet get a red velvet cake mix and make them that way and try it again. it may actually be the recipe not the actual cake.

actually, having allowed them to set over night, they are now the most amazing cupcakes I've ever had. LoL. Who knew? I've been doing some reading, and apparently cake is better when left at room temp for a day, sealed w/frosting. So, I frosted some w/cupcake frosting, some with light royal icing, and some with heavy royal. They are all incredibly delicious, moist and rich. I know they traditionally are frosted w/cream-cheese icing - my DH and I just bought a standing mixer, so we'll whip some of that up next time we make red-velvet....which will most likely be soon... b/c they r FREAKING AWESOME!!!

anybody else have a favorite cake flavor?

You're right, I'm a red velvet cake lover and I totally like it better the second day! My grandmother used to make it for us at every birthday and now my mom does... it's not vanilla, it's not chocolate...it's RED-flavored lol.

Never had it. Now I may try those zingers.
That moistness thing works the same for cookies. Seal them in a tupperare container overnight and the next day they are all chewy and soft.
My favorite cake is plain ol yellow with classic chocolate icing.

It is so wierd how some people can grow up with things and never give them a second thought, and others have never heard of them. I love red velvet cake. Zingers are good, but they don't compare to the real thing.

i like all cake so much so thats what i do for a living...lol...im a cake decorator ,actually we do alot of wedding cakes in red velvet.. heres a couple of my favorit cakes ... sculptured cakes are all done free hand no formed pans.........
of course the fish cake was my 29th bday cake my boss made it for me and i just loved it so did everyone at t.g.i fridays.
