Remora Pro on 25g

Hey, I just got a new Remora Pro for my 25g. I know, overkill. I plan on upgrading to a 125-150g within 6 months or so, as soon as we move. The people at the LFS told me to just set the skimmer cup higher so it doesn't pull out as much. I really like it compared to my old skimmer. Crappy Jebo180. I couldn't keep it from overflowing onto the floor!

Anyways, my question is, can I over skim the tank and what will the effects be if I do?

IMO it depends on what you're keeping. Some corals like dirtier water than others like mushrooms, xenia (debatable), and elegance corals (don't even try one). With SPS corals the more skimming the better, and some people (such as me) skim so much the skimmate only has a tint of brown/green.

I had no idea some corals liked dirtier water. Now, they people at the LFS also told me that it will pull a lot of iodine and other elements out of the water, is this true? Will i have to use more supplements? Sorry, i'm fairly new to all this.

Yes a skimmer will pull out different elements but no more than what a normal cup of tank water would have in it. So you won't have to add any extra elements just because you add a skimmer.
Regarding over skimming like viper said it depends on what you're keeping. I have a couple gorgonians in my 10gal and I don't have a skimmer on it (just a refugium). I believe this has contributed to their growth rate as compared to a heavily skimmed tank. Not so much for the dirtier water but for more phyto, zooplankton, etc in the water.
