What kind of snails do you have?
Cone shaped ones that are taller make it harder for them to turn over. If you have astreas have a harder time repositioning themselves than something like cerith or trochus.
I like Mexican Turbos and cerith snails and see that I have a lot less dying since I decided to keep more of them than astreas.
Also, snails will sometimes just die because of the slightest thing. Crabs will also attack them for their shells. You might want to keep a boneyard at the back of the tank so when the crabs want to change shells they have a larger selection. I keep two boneyards to the back of the tanks and believe me when I tell you there is always a crab trying on a new home.
Do you have any triggers? I know my Picasso will go after snails for the flesh. He seems to like going after astreas, but leaves the ceriths alone. Something else to think about.
I like a good amount of clean up crews because there are times that I get lax at making weekly water changes due to work. Sometimes, if one goes overboard on the amount of clean up crews they will also starve.
