Will hermit crabs eat star polyps? What about emerald crabs?

The brittlestar is not the likely culprit....if something definitely ate them, I would go for the peppermint shrimp. What sort of fish do you have?

i have a bicolor angel, and juvinile blue face angel ( i think) we had a coral beauty but it started shrinking and died... we recently got a very small powder blue tang..
the bicolor is the leader of the tank... he scuffeled with the blue face for a second... and they leave each other alone now... the coral beauty and bicolor got along fine... the bicolor and powder blue tang didnt like each other for like a week... nothing aggressive just alot of tail shaking... but thats stopped now.

All the dwarf angels have a warning on eating or nipping at corals. And a powder blue wont do well in that size tank no matter how big he is.

You do know you've overstocked that tank with fish?
A PB, 3 angels, and 6 other fish in a 55 is not good for long term care. I'd really recommend getting rid of the Blue Face and PB if you care about their longterm health. Both need a 125 to be healthy.
Back to your coral problem.
Bluefaces and bicolors are known eaters of lps, soft, zoanthids, and some sps corals, as well as clams.
SOOOOO
You need to do some reprioritizing of your tank and rethink what you are doing or you're going to waste alot of money. Please look into buying or looking through some fish and coral books to make sure what you put in your tank is going to compatible.

One other thing emeralds were not addressed but they have been known to eat corals as well. If they are not supplied with algae sufficiently they will turn to other food sources....

i think it all matters on how ur system is set up. i got 13 fish in a 55gal and everything is fine. and its been running for 8 months now. i do have 80-lbs live rock and a 10gal sump, skimmer and uv. i dont use and chemicals or additives. i used to but i fine that since i switch from a 29 to 55 my levels have been fine. so i stopped. the lfs (well its closed now) but he had a 715 gal with over 200 fish!! and it was running for 6 six years. so i think its all on the system.

Thats fine and all but the size of his fish are what get me. That blue face is not meant for anythign smaller than a 125. Juvy or not. let alone a PB tang. I just personally don't see the point of getting a fish if you don't plan on keeping it long term which means longer than 2 years....
I've had my 2 green chromis for 2 and a half years and my clown and 2 yellow and blue tail damsels for 2 years now.
