Sponges.

Since sponges take in uneaten food and oxygen in the tank, could they potentially lower the nitrite an nitrate levels in aquariums?
And if I have a fish that is considered "not reef safe" does that also mean it will not be safe with a sponge?

You would likely need a lot of sponges to make a dent in your nitrate levels. As for the fish, what is it?
The ones that I would be worried about are a foxface lo, Porcupine Puffer, and a niger trigger. What do you think?
