If I purchase a pump that has stainless steel bearings, will this have an adverse affect on my tank, or would it be better to go with plastic/ceramic bearings that are water cooled?

it depends on what grade ss it is. any normal ss alloy will corrode in seawater. you need to have some exotic steel alloys like Alloy 2205, seacure, or an alloy with chrome in in like chrmolly or something similar. if its not one on those high grade alloys then you need to make sure that the bearings are sealed off from teh main shaft of the pump.
