It doesn't matter where in Texas...
Sure, our State is huge and has a lot of different weather regions. It does not, however, have a bunch of communes, cults, community housing, or compounds springing up.
I'm visiting family down in SA this weekend and it's even cool here tonight Jenny. We've really had a couple of mild years here in Texas.

Looking at moving to TX in about 6 months. Are there any coastal towns not overrun by Mexicans? I dont want my son coming home speaking Tex-Mex and wearing a bandana...

They are everywhere. But it isn't a bad thing for the most part.

Define cool. I guess 60 degrees in Texas is cool. Cults? Naw, I would never call the Polygamist sect in El Dorado, TX a cult. Community housing? That's called Section 8 Housing in San Antonio. I've seen some of these domed housing projects pop up in the Hill Country area around Kerrville. Ranchers set them up for deer season for the hunter's they lease their land to. I'd rather stay in one of those, as opposed to a cramped cabin with a small iron stove you have to a build a small fire in to keep warm.

You will rarely find a community in Texas south of Austin that isn't as you term "overrun by Mexicans". If you're looking at living on the coast, then Corpus Christi, Port Aransas, or Rockport are very nice communities with a variety of ethnic backgrounds. Even with heavy Hispanic populations, cities and towns in Texas aren't like East LA, where you see all the Hispanic gangs and thugs. Trust me, it's not that bad. I will say that over the last couple of decades, many of the larger Texas cities have become a majority of Hispanic decent. Look at Dallas. Fifteen years ago, you could hardly find a decent Mexican restaurant in that town. Now Farmers Branch has made it where apartments have to verify immigrant status before renting a place. San Antonio is a given. I think we're at least 57% Hispanic. My kids can't even speak Spanish, much less wear bandanas. Now sombrero's and drinking cerveza is another question....

I just have visions of drug running illegals pouring over the border and teachers speaking broken english to the kids.

It isn't that bad, most mexicans are very nice and have a lovely culture, great food, and awesome parties. They just vote some morons into office in corpus. (that is my main complaint) and like selena to much. They have a shrine of her on the bay. Corpus has a great aquarium! the Lexington is a cool museum! They just lack in good seafood restarants.
