The simple answer is that they do this to stun their enemies (usually other shrimp). They also do this as a defense. If you ever get too close to it, it might try it on you. I've had it happen to me once. It kind of feels like someone is flicking you.

It took me a minute, but I found the video that I love. http://www.youtube.com/watch?v=eKPrGxB1Kzc It is so corny. I also am not sure that the bubble actually reaches the temperature of the sun. I think it is close, but not quite that hot. The sound effects get me every time.
