you can run a skimmer to long and take away things the corals need, but as for the second part i dont have a skimmer as of right now, so i have no idea
=/
EDIT
I stand corrected, but from other sources, i do stick by my input :D

A skimmer does not usually produce skimmate continuously, but will react to any dissolved organics. I would be interested in reading the info you have stating to much skimming is detrimental to corals

Dr. Ken Feldman wrote an article on Advancedaquarist about skimmers which was pretty interesting.
Even with a skimmer thats grossly overrated for your system, you aren't in any danger of pulling too much "good stuff" out of the water.

The only time your skimmer should be turned off is when you're using a medication that requires the skimmer to be off and in this case, just follow the directions or if you're feeding phytoplankton, I'd suggest not running the skimmer for 30 mins or so. It's been proven that running your skimmer 24/7 is more beneficial than harmful for your tank (fish and corals).

It depends on how good the skimmer is and what type of corals you are keeping. Lets say you had frogspawn or gorgonians you would want some nutrients left in the water to get fast growth and good color. And you may not need to feed them at all depending on the coral if you did have some nutrients in the water…
So I guess it is up to you to decide if nutrients qualifies as “good stuff”, but in this case you could over skim…
