I've never had kangaroo before..I imagine thats hard to come by in the US, I don't think I have ever seen it offered before from the food reps we used to work with. Sounds intriguing though, I love new foods

we generally start picking at the skin right out of the oven.
The crunchier the better. My 22 lb guy was moist and delicious. My dressing is very simple and REALLY good COLD. In fact I had a little for breakfast

Duck and goose too greasy for my taste. A turduken looks very difficult to create. I saw Paula Deen make one with her hubby and it was a mess to make. But I guess people like it.

Nice to see I am not the only one who doesn't care for turkey. IMO, nothing beats a real quality ham for Thanksgiving but then again, piggie is the king of meats!

I am not a fan of Turkey either..Turduken is great...
Talking wild meat...Bear meat is real good, I have had Rattlesnake...Rather greasy..I have SEEN people eat opossum(I cant eat that...Kinda like on Pulp Fiction"Its a filthy animal") Alligator...Bear meat is really good though..Not as gamey as you would think it to be..Elk, Caribou is good as well..
Ham is the highlight of Thanksgiving.

I too admit to not being a big fan of turkey. Although I do eat it there are a lot of other types of foods I prefer, so I really dont eat that much turkey and make up for it with mashed potatoes, and other sides that are on the table.
Christmas dinner is always Prime Rib, one of my favorites.
However some of my more memorable experiences was when we ordered Cabelea's Big Game meal one year. It was really good, ostrich, kangaroo, buffalo, wild boar, black bear, pheasant and I believe there were a couple others.
And every year we go to a game dinner at a local country club. They serve some really cool stuff. I've had rattle snake, alligator (tail), duck, rabbit, buffalo and was even talked into trying rocky mountain oysters..
Elk and Caribou.
