water change and clean-up crew?

After a disasterous couple of months stemming from the blatant lies from the LFS :mad: , my tank has finally cycled and stabilized. How big a water change should I do to get my nitrates down from 80? Its a 10 gal with a false percula clown and a blue damsel, any clean-up crew suggestions would be great as well.

Do 2 gallon changes to get thenitrate as low as possible. Which is 20%. Then i would keep up with 10% weekly changes.

I would do 20-30% changes once a week for the first few weeks.
As far as clean-up crew, I would get 3 to 4 hermit crabs and 3-4 snails to start.
