actually, fondant should never be refrigerated - moisture is the arch nemesis of fondant - it causes it to melt into mush. when people order wedding cakes from me, I offer to preserve their toppers/flowers/what-have-you, and what I do is seal them into dry airtight containers (usually those pretty plexiglass domes) w/ a teeny tiny little airhole to allow any moisture in there to escape. It can keep literally forever if it doesn't get moist.
