Yup, they have a digital thermometer built in. I use three different kinds of thermometers just to be safe and they all usually match. The Ranco is great because it is accurate to 1 degree and all you do is turn you heaters to the max and it takes care of the rest. This gives you an idea on what it looks like. I have the white plug hard wired to the controller.
Why do you have to turn the heaters all the way up? I am still a little confused about how this actually works.

You don't have to turn the heaters up all the way I just do that so if it dips down I'm sure they all kick on. Its pretty simple how they work. You plug the Ranco into your power outlet and then plug your heater(s) into the Ranco. You set a desired temp. in the Ranco and when it dips 1 degree below that temp. it turns the heater(s) on. When it gets up to temp. it cuts the power off to your heater(s). The digital display stays on all the time.
