Not that I am an expert, but don't fish "grow" to the size of the environment? That is, if someone put a Naso in a 72g tank, would it reach 18-20 inches, or would it's growth be limited by the size of the tank?

Most saltwater fish do not limit growth based on tank size. You don't often see large Tangs in small tanks because they don't survive to adulthood.
