Any good Recipes???

Being a single parent (my children are with me 1/2 the time) I am in the kitchen alot...
I love to cook, and wantd to see some qwik easy recipes other than Mac n Cheese, hot dogs, cereal, all the easy out of the freezer stuff...
here is one of my kiddos favorites...
thaw 3 chicken breasts...
In a cassorle dish...Season with salt, pepper, Lawry's season salt, garlic powder, and brown sugar...
Cover with salsa (how ever spicy you like)...
grate cheddar cheese (I use Sharp) over the top...
Bake - 375 for 25 min...
Make some "Minute Rice" white rice...
Mix the rice (while in the pan) with salsa and cheese (once again I use sharp cheddar)
good stuff!!!

Mmm sounds good...for a quick lunch I do something called stuffed soup.
Stuffed Soup
1 box stovetop stuffing (chicken)
1 can cream of chicken soup-reg. size
1 can chicken broth-reg.size or in place you can use 1 canful of water
Mix all of this in a bowl and spoon into a hot sandwich maker. Takes about 4-6 mins to cook depending on your maker. I've noticed that depending on the brand of broth you use it could make it too salty thats why I suggest water or a reduced salt broth. Yumm, my family loves it.

Seriously, how many do you want. I am a mother of three, the possibilities are endless... Living in a town with no resteraunts, you learn to get creative and have to cook, a lot. The kids love enchiladas and they're quick and easy
Marinate a couple chicken breasts (I use a garlic marinade-the bottled kind)
Grill them and slice
Place the chicken, shredded cheese of your choice, and enchilada sauce on a tortilla and warm in the oven till cheese melts. For my man and I, I add some grilled onions and peppers but of course, the kids say no way to that stuff. You can make these with just cheese also if you have a child who doesn't like meat.
Another way to make great use of those chicken breasts is to make wraps also. Just place some of that left-over chicken from above on a tortilla, add some ranch dressing, shredded cheese and veggies of your liking and enjoy. Works good with ham too.

I'm a voluntary stay at home dad (I cook, do laundry & dishes, sweep, etc.) and I love to cook. Spaghetti is fast and easy. Make 3 times too much for one meal. On day 2 mix the noodles, sauce and meat leftovers in a large bowl adding your favorite shredded cheese, feta and parmesan cheese, garlic powder, onion powder and salt to taste (feta is salty). Spread this into a large caserole dish and cover with cheddar jack shredded cheese and bake at 350 until cheese browns to your liking.

socal...I have made that!!! my kiddos didnt much care for the left over spaghetti baked though...grrr...I thought it was good, I saw that recipe on the cooking channel, but they added a couple of eggs to make the mixture more firm...
rberhow...I make wraps out of just about everything, but my kids just pick out everything and leave a tortilla masacred on thier plate...
another meal i like to make is a "pizzadilla" out of left over spaghetti or tacos...
throw the leftover meat sauce or meat on a tortilla top with cheese and bake until the cheese is melted/starting to brown...
love these ideas!!!
would like to read more!!!

i havent ever tried goulash... well the traditional recipe... but, I'm pretty sure I would like it..

Well its quite simple to make...... Take and brown some hamburger in chunks sizes to your likeing, we usually use a 2 gallon pot so you will have to adjust for what ever size pot you use. then while browning meat also boil some elbow pasta. when done boiling pasta take and add pasta and meat together in b ig pan and then take diced tomatoes and add them all together... add diced tomatoes to you likeing soupy or not soupy. take a little bit of onions and and salt and pepper add it all together bring to slight boil in big pan and then turn temp down and let it cook down a little and there ya go...

i will dig out the exact recipe tomrrow for ya sorry for the whole jumble of words im tired and should be in bed but son is awake and he is teething so haveing some stay up late tonight.

if your kids like chicken thaw out the chicken, then in a small bowl mix together a breading of basil, dried garlic, salt and pepper, parlesy ( I like to use the dreid seasonings because they tend to stick to the meat better), and if you must you can add a little flour. I like to coat the chicken before I put it into the mixed seasonings with an egg wash( just eggs beat) so that they stuff sticks but it is not nessesary. Then i put them into the olive oil about 8 min on each side and then they should be done. to make it fun you can cut the breasts into tenders and the kids will lik to help you too. Then for the veggie green beans are really good with the chicken and maybe a little french bread. need more ideas just ask, i specialize in the italian department.

OK, just tried this last night. WOW what a mac N cheese, have to tell you it's expensive but if you want to make an impression on dinner guests, wholy cow and I mean the WHOLE cow!
3 1/2 cups elbow macaroni
1 1/2 cups jack and cheddar cheese shredded
10 oz velveta cheese cut into squares
10 oz white vermont cheddar cheese (i used new york)
15 oz gruyere' cheese shredded
4 oz cream cheese room temp
2/3 cups sour cream
1 1/3 cup half n half
1 1/3 cup heavy cream
1 egg
2-3 tbs flour
1 tbs worcheshire sauce
1 tea garlic powder,1 tea onion powder, 1 tea dry mustard, pinch of cayenne pepper pinch of nutmeg salt n pepper to taste.
Are ya gettin the idea this is not the typical 5 year olds, I got the "BLUES" mac n cheese?
This stuff is fantastic!
butter up a 13 x 9 baking dish. oven 350. Cook macaroni until firm not REAL done. "drain well" and pour into buttered dish, set aside. In a large mixing bowl, add half and half, heavy cream, sour cream, cream cheese (in small soft pieces) add egg, flour, worcheshire, all spices except paprika that's for the top, and whisk thourghly. A little lumpy is ok.
place the cheese squares all over the top of macaroni and push down with fingers to sink um in. Now sprinkle the Gruyere' shredded cheese over the top
of that. Pour the artery clogging cream mixture evenly over the top of that. Take your fingers and poke a few holes into the dish to let the cream sink down some more. Now spread the jack and cheddar cheese over the top of that, sprinkle w/ paprika and put this baby into the oven for about 30-45 minutes until it's browned and bubbly. A one way ticket to paradise to say the least! Butter my butt and call me a bisquit, this is comfort food!

Although, when I make it, I will either leave out the info about the fat/calories and tell them to just enjoy it or just
serve with a Diet Coke to cancel them out

I simply made hamburger pattys (pan fried) served without a bun and large tomato slices. My neighbor friends thought it was delicious. I can't wait to make it again, only after I jog off what I put on last night. LOL
I love to cook!

OK, a few more ideas for you. Do you have a crockpot? If not, get one. They are God's greatest invention to home cooked meals without the fuss.
BBQ ribs
place your ribs (they can still be frozen and can be boneless or with bone but with is better) in the crockpot the night before with about a cup of beef broth, onion, garlic, and seasonings to taste. Cook on low. In the morning, you may need to drain a little of the broth. Then slother with your favorite bbq sauce and let this cook all day on low. They'll be ready and waiting when you get home. I serve them with the Uncle Ben's Long Grain wild rice boxed things. My kids love the original recipe. Throw a veggie on the side and a glass of milk and you are set.
Roast
Again place the roast in your crockpot the night before with the beef broth again, onion, garlic, and seasonings. Let cook on low until the next night. That's it, really, and it will be so tender you can cut it with a spoon. Serve with mashed potatoes and gravy from the sauce in the crockpot.
Pork chops and rice
Mix 1 cup rice with a can cr. of chicken soup and a can of cr. of mushroom soup and about a can of milk. Pour into a greased casserole dish. Place your pork chops on top and bake. You can brown the pork chops first or not, its all up to you. Bake for 1.5 hours or until done, stir half-way through so rice mixes and pork-chops don't dry out.
We are having chicken broccoli casserole tonight but not sure if you want that one or not. Let me know.

How do you guys/gals make BBQ sause? Every time I make it, it tastes good but its too watery.

Beth-I will check my cook book later but there is a recipe that uses coke and brown sugar that is really good.

Speaking of the crock pot, get a cheap hunk of meat put it in the crock pot along with a can of cream of mushroom, lipton onion soup, and a cup of water. Cook on low for about 8-6 hours (the longer it cooks the better it is) and make some mashed potatoes and corn. I love this since I don't have a lot of time with classes and all.

See the crock pot is the best!!! I'm glad you mentioned that the meat does not need to be an expensive cut either 'cause even the cheapest ones will soften up and taste delicious in the crock pot.
