To thicken the sauce add a mixture of corn starch and COLD water to the simmering sauce then bring to a boil to thicken. I just mix the cornstarch instinctively but I'm sure instructions come on the box.

I'm originally from Kansas City so I was introdudced to barbeque straight out of the womb. I made my own sauce for years until these guys from Chicago marketed their family recipe. SWEET BABY RAYS is simply the best bottled bbq sauce available to mankind. Sometimes I'll still modify it depending on what it's going on. My home sauce always starts with apple cider vinegar, brown sugar, dash of salt, water, worcestershire sauce, liquid smoke and onion powder. Then I add things to make it fit the dish. Saute'ed onions, diced green peppers, pineapple tidbits, ginger, marichino cherry juice or any combination of these. Thicken to your liking with corn starch, just remember to use cold water when mixing the starch and add it to a warm sauce then bring to boil.

If they like spicy food then they will like enchiladas. those are super easy. Just get canola oil heat it up lightly fry the corn tortilla skins, (I use the super sized ones) then put cheddar & monteray jack in the middle roll them up like a burrito put some sause on them and of course cheese on top cook until cheese is melted and some rice for the side.

I cook all the time and I have come to enjoy it over the years. I have a few good recipes I will share.
First is Meatballs
1lb ground beef
1/3 cup bread crumbs
¼ cup parm cheese
2 cloves of garlic (cut up very fine)
1 egg
1 teaspoon of salt and pepper
Combine all ingredients and mix well
Cook over medium temp and sear in olive oil till all sides are browned
Add to sauce and cook for several hours.
Next is awesome pizza crust
2 ½ cup flour (good flour such as King Arthers)
8 oz cold water
1 tsp salt
¾ table spoon olive oil
¼ teaspoon yeast
In a bread maker I will mix for 5 minutes, let rest for 5, kneed for another 5, rest for another 5 and finally kneed for another 5 minutes. When done, I will put in a baggie and let sit in fridge for at least 12 hours.
Cook at 500 degrees, makes very good crust!

Chili recipe :here's one of my favorites:
You'll need 1lb of ground beef
1 lb of ground pork sausage
lg onion-chopped
2 cloves or more of garlic/finely chopped
lg bell pepper/cut into chunks
1lb of smoked sausage/chopped into bite size pieces
1tbs ground oregano
3tbs chili powder
1 tsp corriander
1 1/2 tsp celery seed
2 large jars of cut tomatos/undrained
2 large jars kidney beans but save the juice separately
1/2 cup yellow corn meal
mozzarella cheeese (for the top) shredded
in a large heavy cast iron stock pot (or whatever) brown beef, pork sausage, onion and garlic. Add bell pepper and sausage chunks continue to cook for a bit. (you can drain fat if you want) I don't. Add spices nad tomatoes (use your hands to break up or squish up the tomatoes) simmer some more and add the beans. In a bowl add some of the bean juice to the corn meal until like pancake batter consistancy and mix into the chili, this helps to hearty it up. Simmer for awhile longer and top w/ cheese when you serve it. Very good recipe I use it a lot. don't be afraid to embellish w/ whatever tickels your tongue!

Sweet Baby Rays
is awesome sauce. last year at almost every Houston Texans FB game, HEB (grocery store) drove through the tailgaters on those segway things and passed out bottles of that BBQ sauce. I have like 5-6 still in my pantry! Good stuff!

hmm... since nobody seems to be suggesting any asian recipe, let me be the first then.
I dont know what this is called in English so let me start then
one pound of minced chicken or turkey
a piece of onion, chopped
2 cloves of garlic, minced as well
scallions or green onions if you like
2 table spoon of soy sauce and 2 table spoon of oyster sauce
a table spoon of sugar, can be adjusted if you want.
an a pinch of white grounded pepper.
and sesame oil to make those around you drools

Just make sure the chicken or turkey is cooked well before adding the sauce or spices.
And you can make this chicken and have lettuces available.
I make wraps out of lettuces for this , and it will great for your kids to eat their vegetable. :)
let me know how it works

Haha :) u know it, lettuce wraps, but my own recipe.
For the minced chicken or turkey(you can even use minced pork, but not beef since beef gets chewy), sometimes they sold those preminced, so you can just ask for them from your local meat dept. or sometimes they came in a tight plastic bags i believe.
the way you cook it, just stir fry the meat(with pam or regular oil) until about 80% done and just add the spices and the sauces. Just make sure you break the meat apart so that there wont be any big lumps and unspiced territories :) Let me know if i can be more help.

An easy one that your kids will probably like is burrito's. Just get some refried beans (or whatever bean you like), some cheese, and a soft tortilla shell and add some salsa or enchilada sauce. You can also add some onions, maybe some chicken (for this I usually use fully cooked chicken that just needs warmed up), rice, spices like red pepper or cajun seasoning, and whatever else you like on your burrito. You can actually get pretty creative with it and the hole meal can take maybe 10-15 minutes to prepare and cook, which is why I like it.
I also like quesedilla's (sp?) which have similar ingredients of course. No reason you couldn't make taco's either.
When I cook I always try to make the meal healthy. That's pretty easy to do with many mexican foods and that's part of why I like them.

I've got a good quick kid-friendly recipe.
Chicken Pockets
Take a roll of refrigerated cresent rolls and separate into triangles
stuff each triangle with chunked cooked chicken
bake in the oven untile the cresents are nice and brown
mix 1 can of cream of chicken soup and 1 can cheddar cheese soup on stove
serve sauce over the pockets or let your kids dip the pockets in the sauce
You can stuff the cresents with whatever your kids like-turkey, ham, veggies
Make a baked potato or broccoli and put the sauce on that too. I usually use leftover chicken or turkey, but I've even used the canned chicken.
Very quick and easy dinner.
Thanks for starting this thread. I love recipes.

Kuniva,
I am learning asian cooking and have trouble with my lo mein/fried noodles. When I fry it, it gets chewy before it is ready. Do I need to turn up the heat and reduce the fry time? and how do I keep the noodles from sticking together. After I boil them I put them in the fridge overnight and fry them the next day with chicken and cabbage, sesame and peanut oil, and a little teriyaki. They seem to stick together after sitting in the fridge. Should I fry them the same night I boil them?
Any help would be appreciated.
thanks

I make something like this but put taco meat in the crescent rolls and then place in casserole dish, top with a can of nacho cheese soup and a can of milk. Back for an hour or until golden brown. Top with salsa and sour cream.
