I don't know if there are too many of them out there but here in CT there is a Ted's Montana grill. Bison is their speciality everything they serve as beef can also be served as Bison, I thought it was not that bad nothing special though

I've had one before too. Thought it was pretty good, not particular different from a standard, good beef burger. If anything, maybe the meat had a bit more favor, maybe being a touch less lean?

Either way, IMO a premium prime rib burger takes the cake

Actually, buffalo (or bison) is very good. It's more lean and if prepared right can be a healthier alternative to beef. I eat it regularly. I'm Cherokee so we eat a lot of it and deer. Personally, I like the buffalo steaks medium rare on my grill. Or not so healthy because of the Indian bread, the Indian taco. It tastes better than beef to me. But to each their own.

I have only had it once (burger), many years ago and I thought it had too much gristle in it. This must be where you’re describing; "prepared right" comes in. Either that or these guys just dropped the whole carcass in the meat grinder...

buffalo is great, but you have to be carefull not to overcook it or it will be as dry as shoe leather because there is hardly any fat in it.

We live near a great big Cabelas (outdoor outfitter's store, hungting, fishing, climbing, camping store; if you do it outdoors, cabela's sells stuff for it), and they have a restaurant upstairs with an exclusively game-meat menu. Bison, buffalo, venison, etc. The stuff is FABULOUS. Honestly, it tastes more like beef than beef does, if that makes any sense....
it's just more flavorful, really. Of course it all depends on how it's prepared; I say definitely get yourself out there and go have yourself some buffalo bratwurst or some bison burgers, but go to a nice place where you know you're getting good stuff that's been prepared well. you won't be sorry.
