What kind of chopped beef? I've made mine with bacon, leftover pulled pork and leftover brisket, but since I'm usually making the beans to go along with pork or brisket, I dont usually have those around as leftovers when making the beans, hence the bacon.
Actually sometimes we'd get the chopped beef from HEB, they like overly season it, bbq-ee. Then put some colgin in it. Almost a dry bbq style chili. With chopped beef, sausage, or other bbq meats.
